Flakes are produced after drying destalked garden-fresh pods in electrically operated dryers. Final moisture content is 8-10%.

In Assam this deadly hot chilli is treated with immense respect. Employees that deal with the Bhut Jolokia (naga) wear goggles, face masks, head covers and protective clothing to deal with the chillies. Ananta Saikia, the owner of Frontal Agritech Ltd has been quoted as saying that one chilli can last his family for a week. The raw chilli has a strong but pleasant fresh vegetable smell. Cooked in a curry it imparts perfume-like sweetness to all the other ingredients in addition to a fiery heat. Dried, the chilli changes character again with a further intensification of taste and aroma.

Hot Chili con Carne Spice Blend

Our Chili Powder Blend is a blend of authentic spices to enhance chilli con carne or stir fried meat and vegetables, enchiladas, and many other Mexican and Southwestern dishes. Extra Hot and Hot Chili con Carne powder differ only in their heat scale. If less Hot Chili con Carne Powder is used to reduce the heat then the flavour of the other ingredients will be lost. Conversely, if more Chili Powder is used to increase the heat then the intensity of the other ingredients will also increase.

Chilli con Carne Recipe Idea

1 tablespoon vegetable oil
450g minced beef
1 large onion chopped
Start with 1 - 2 tablespoons of Chilli con Carne Spice Blend
2 cloves of chopped garlic
400g tin chopped tomatoes
400g tin red kidney beans drained and rinsed
225 ml water
oxo cube and tablespoon of tomato puree optional

  • Add Vegetable Oil
  • Brown the onion
  • Add minced beef to pan and brown. Drain any excess liquid.
  • Add garlic

  • Add 1 - 2 Tablespoons of Chilli con Carne Spice Blend, tomatoes, kidney beans and water. Bring to the boil, stirring.
  • Cover and simmer gently for 15 to 30 minutes, stirring occasionally, adjust seasoning. Can be cooked day ahead as flavours will improve.
  • Serve with rice and pitta bread or wraps.

Ancho (Ahn-cho) Chilli

Ancho powder is 100 pure to provide an authentic flavour. Grown in Mexico, Anchos are common to Mexican and South-western cooking. Anchos have a mild, sweet, fruity flavour. Ancho is the most commonly used dried chilli in Mexico. An Ancho is a dried Poblano Pepper and often is mislabelled as a Pasilla or Mulato pepper.
