Bhut Jolokia Flakes, A Hot Grind Every Time
Flakes are
produced after drying destalked garden-fresh pods in
electrically operated dryers. Final moisture content is
8-10%.
In Assam this deadly hot chilli is treated
with immense respect. Employees that deal with the Bhut
Jolokia (naga) wear goggles, face masks, head covers and protective clothing to deal with the chillies. Ananta Saikia, the owner of Frontal Agritech Ltd has been quoted as saying that one chilli can last his family for a week.
The raw chilli has a strong but pleasant fresh vegetable smell. Cooked in a curry it imparts perfume-like sweetness to all the other ingredients in addition to a fiery heat. Dried, the chilli changes character again with a further intensification of taste and aroma.

con Carne Powder is used to reduce the heat then the flavour of the other ingredients will be lost. Conversely, if more

Chilli con Carne Recipe Idea1 tablespoon
vegetable oil
450g minced beef
1 large onion chopped
Start with 1 - 2 tablespoons of Chilli con Carne
Spice Blend
2 cloves of chopped garlic
400g tin chopped tomatoes
400g tin red kidney beans drained and rinsed
225 ml water
oxo cube and tablespoon of tomato puree optional
- Add Vegetable Oil
- Brown the onion
- Add minced beef to pan and brown. Drain any
excess liquid.

Add garlic
- Add 1 - 2 Tablespoons of Chilli con Carne
Spice Blend, tomatoes, kidney beans and water.
Bring to the boil, stirring.
- Cover and simmer gently for 15 to 30
minutes, stirring occasionally, adjust
seasoning. Can be cooked day ahead as flavours
will improve.
- Serve with rice and pitta bread or wraps.

Pepper is the most common chilli in Mexico after the Ancho.
Guajillo Powder is made from grinding the whole Guajillo

Paprika has been the single most important ingredient in Hungarian cooking for more than two centuries. Hungarians consume 6,000 tonnes a year. Paprika powder should rank very highly in the ever-expanding British spice rack.
